Pickle Shickle Tacos

 

PICKLE SHICKLE TACOS
Best had with some beers post a hard day at work... Or even on a relaxing sunday :)

INGREDIENTS:

- Taco Shells (These are readily available in the market)
- Guacamole Or mashed avocado with a wee bit of onion and lime juice
- Mango OR Pineapple salsa (Tomato salsa will do too)
- Grated cheese
- Sour cream OR our family yoghurt dip recipe which we shall share with you
- Iceberg Lettuce
- Pickle Shickle pickle of your choice

For the Mango OR Pineapple Salsa
- Dice 1 big mango OR 1/2 Pineapple
- Dice 1 small onion
- corriander
- chilly flakes (for seasoning)
- A squeeze of lime

For our special Yoghurt Dip:
- 1 box/ big bowl of yoghurt
- 1 tsp honey
- Some chives OR 1/2 tsp garlic paste
- Salt and Pepper to taste

METHOD:

In your taco shell, line up a layer of guacamole or avo paste. Next, a layer of the mango (or pineapple) salsa, over that some youghurt dip (or sour cream), then the grated cheese, a generous amount of your favourite Pickle Shickle Pickle and finish it off with a sprinkle of the iceberg lettuce.

Make sure you have enough taco shells... people keep coming back for this one!
